Finn River Honey Meadow Cider: Finnriver's 'Elijah K. Swan' Infused Botanical Hard Ciders are named after the good folks who sold us the farm (Lige & Kay Christian) and who first planted apple trees here, as well as for the trumpeter swans that overwinter in the valley. This cider is a tribute to our neighbors and to those big white birds who remind us that earth is still wild. Each season the 'Elijah K. Swan' release seeks to capture the wild and garden-grown taste of life on the Olympic Peninsula. The Honey Meadow cider is our SPRING release, featuring Finnriver's bright base of fermented organic apples, backsweetened with Olympic Peninsula honey and infused with local lemon balm and chamomile. With thanks to Denise at Mountain Spirit Herbal Company and Tinker Cavallero, local gardener extraordinaire, for finding us just the right herbs for this blend. Drinking this might make you feel like a happy honeybee after a great green day among the blossoms... Tasting Notes: Don’t be fooled by “Honey” being the first word you see. This cider is just kissed with Olympic Peninsula honey on the finish; I find more flavor influence from the lemon balm and chamomile. It’s like the world’s greatest calming herbal tea blend, but with apples, fizz, and and some alcohol. I’d like to try it with a coconut curry infused with lots of lemongrass; the zip of the lemon balm would cut through the richness of the sauce as well as compliment the lemongrass. And if, like me, you don’t like to skimp on the fiery chiles, that touch of sweetness from the honey will put out any spicy fire.

Eleven breweries make authentic Trappist beers: six in Belgium, two in the Netherlands; one in Italy; and one in the USA. These beers are brewed withing the walls of a Cistercian, or "Trappist" monastery. We currently carry Westmalle Dubbel and Tripel, Rochefort 8 and 10, and the Orval Trappist Ale.
Selection of Summer Wines: Summer weather is here, and there's nothing better than a chilled glass of rose to pair with the sunny skies and warm days. We have a great selection of local and imported wines for you choose from. Current favorites include the local favorite Dynasty Cellars Rosé, made right here in Bellingham, and the Miradou Côtes de Provence Rosé straight from France. Another great summer selection is the Faisão Vinho Verde from Portugal. A bright greenish hue. Has a beautiful bouquet aroma of ripe pear, apple, and ocean freshness. Features a touch of honey ripeness while showing fresh herbal notes on the finish. Typically paired with seafood (especially grilled and slightly spicy), ceviche, chorizo, paella, sushi, and ideal match for raw shellfish.
